I may try that.  Mainly I'm trying to envision how the game would actually generate terrain.  I really want to avoid tiles as much as possible, I feel there's a lot of untapped potential in less gridded design.

Fair enough, but when it comes down to it, pixels are a grid anyway. 8x8 tiles are pretty small compared to your actor, and if you had sloped tiles, I think you'd be able to achieve a very similar effect.

Yes, this exactly. Remember that "grid" does not necessarily mean blocky.
A grid is just an efficient, logical way to arrange things.
