What exactly is the stopped motion of? Like it doesn't look like clay or anything I can think of?

made by the same people who made coraline so it's probably 3d stop motion.
made from high quality 3D models, not clay.

Yeah... well at least to me that definitely looked like CGI not clay. Which means that if you want to make real clay-animation, why make it look like CGI.

It's definitely stop-motion, and using high-quality models most likely made from silicone parts and metallic armatures; similar techniques were used in Henry Selick's movies, like Coraline and The Nightmare Before Christmas (Tim Burton's concepts, but he was the actual director). There's no rule that says stop-motion animation has to be made exclusively with clay models, after all- just watch A Street of Crocodiles. And then never sleep again, but that's beside the point.
The point isn't to make it look like CGI, it's to make the animation as smooth as possible, and if it produces gorgeous results like this, then who cares if it's not CGI?

Well best thing about non-CGI animation is that it doesn't look like CGI. So why trying to make it look like that?

I think it's pretty obvious that the movie is stop-motion. It shouldn't be held against the movie that the majority of 3D animated features these days are CGI, so most people immediately think CGI when they see something that's not 2D and/or hand drawn.

But it is. You can tell that the movements of the characters isn't completely smooth. It's particularly obvious in the shot of his feet when he jumps out of bed (12 seconds in). Watch how his trousers fall. It's got stop-motion animation written all over it.
EDIT: Just to expand on the characters not moving as smoothly part. This is because they generally lack motion blur, since the frames are static shots. With CGI, motion blur is rendered each frame.

It is not. If you don't know what stop motion is, sure. The qualities specific to the medium stop-motion are incredibly subtle.

Now this looks like stop motion: http://www.youtube.com/watch?v=G9IscZMYYw0The one we talk here looks like CGI. Making real stop motion to look like CGI, is waste of resources. The "magic" behind good stop motion is that it makes scale models / figures / toys to look like alive. The trailer looks as dead CGI animated film as the worst ones from Pixar / DW. I still can't see the difference, and well, I don't want even. Point is not is it or is not what, but what it looks like.

So you're basically complaining that the quality of stop-motion animation in Paranorman is so good that you can't tell it's not CGI?
