I haven't watching anime recently but instead I've been helping a friend get into it, it's been interesting seeing his opinions on stuff, but I really wish he didn't watch Eva without watching a bunch of other stuff first.

You should have probe their taste, find something that suit him with a twist and move him up the ladder, there is an anime for everyone, the best to start of are those who are mundane subject like wine, bread, sports, etc ... because it's a known reference with all the manga greatness (at least in book, anime is more hit and miss in adaptation)

Yeah, but if you introduce someoen to anime and manga it's best to intrdouce them not into anime "anime" but in stuff that broadcast the idea that anime can be "anything and evrything". I remember introducing people to hikaru no go (manga), and how they were relunctant because "what a fuck is go" that sounds boring, overnight they starting playing go online and got into anime

They really are.  Hell my then-60 music teacher showed us Nausicaa in middle school and a few of my friends have watched Spirited Away.
