By the sound of it, you should really look into Spelunky.

And once you've played a dozen or so games to get the flow of how it works, hit F3 to open it's level editor and play around a bit. Sounds to me like that's the part you'd enjoy playing with the most.

Also, if you like classic Zelda, you'll love Zelda Classic; it's basically a Zelda 1 remake with a full-blown level/world editor. Seems it's hot topic of the week.

It's also important to understand why minecraft is a bigger hit then clonk.
I think playability (clonk is clunky) and visuals (clonk is awful, minecraft simple, but pleasant).
This is what I ment. Clonk is a great game (I enjoyed many hours of it), but it requires a while to get used to. It's also not easy to play at al. You can dig, but you need to press dig twice to produce "sand items", and if those sand items fall they produce less sand then you dug away. Minecraft takes away a lot of the features and replaces those with 3D and simplicity. You can carry only 1 item in clonk, you'll need lorries and storage houses to keep stuff.
To destroy rocks you need explosives, the whole pickax deal is a lot easier. (Clonk did have a much better water&pump implementation)

Terraria "takes" a few of the clonk features that Minecraft doesn't have, but still keeps it very playable. It also add a bit of "RPG" feel with monsters, without making it feel out of place.

And the fact that Minecraft went viral, that's... just luck.

The free-form voxel-based building is probably the thing I enjoy most. Unappealing: the grinding/slow mining. The combat is also usually poor (Terraria and Minecraft at least). I also don't like the day/night cycle much.
