i love the concept of de-making a game, i'd love to see some freeware ones. and dang, i was going to post CounterStrike2D. that game is really some wonderful fun.

If I could vote for one demake, it would be Metroid. I played Prime and really disliked it. It's a good game, but it's not Metroid to me. I really wish they'd go back and do an orthographic 3D version for the Wii. I love metroid prime, I think it made the jump perfectly. but I definitely wouldn't turn down a 2D remake.. well, except for the MP2D fan project.. it's terrible..

Daikatana for the GBC was pretty fantastic, but I'm not sure if that was so much a port as a de-make.
I also remember seeing somewhere that someone was de-making Ocarina of time into a link to the past style game.

Clover had an 8-bit styled Okami on their website, don't think you can get to it anymore though, it went as far to recreate Okami's music in a nes chiptune style. It's impressive as this was an official de-make.

ever see that movie 'crank'? right from the get go of the movie they imply that this is a video game movie (of a game that doesn't exist). jason stratham goes around acting pretty much like what any beat em up character does in a game, but in the context of the real world, he's clearly made out to look like a raving lunatic.
anyways - the de-makey part comes right at the end of the credits. we see an 8-bit version of stratham surrounded by bad guys in a scene that looks very double dragon. he jumps a bit, punches someone, and thats about it. pretty much confirming what viewers might have suspected all along - crank is gta or final fight on film.

Crank is an excellent film! Excellent in every way. I didn't see that 8-bit Statham bit though! Ah good, another excuse to watch it again.

From memory it was some kid that made a bunch of fake screenshots and promises beyond his ability, then floundered around for months. After taking a bunch of donations he faked his death. Or something.
