I really don't know any other way other than "eyeballin' it"... Do you guys have any tricks to do this better?

Well, I think you should have the perspective lines all pointing at the same spot.
Do you have a reason to have a few that are off?

I like what you've got. I've been working with some top-down stuff myself lately, and so far I feel like eyeballing it is probably your best best. So long as it reads correctly and you keep getting feedback, it should be fine.

That said you could do a little 3D modelling to make your own references just to keep the perspective kind of in order, if you really felt like it.
