Critter Crunch mobile is pretty fun. Sushi Chef is pretty fun too although it gets repetitive.

The Final Fantasy Tactics: War of the Lions port is coming out after all. Not sure when, but according to Toucharcade it's been submitted to Apple.

Ascendancy. Improved remake of an old PC 4X game, somewhat comparable to the Master of Orion series and GalCiv (but a bit more complex). The interface isn't too great, but since the game is turn-based it shouldn't matter that much.

Edge Extended is better than the original, IMO. Cheaper, too.
The real star is Jetpack Joyride. I don't think I've ever played an iThing game for two hours straight before.

Plants vs. Zombies is only a dollar again and has seen quite a few updates since its release it. The game never interested me all thaat much despite all the polish and charm, but I guess as a mobile game it should work even better than on the PC  From what I've heard the iPhone port is nearly identical to the PC version, only lacking the Endless Mode.
