Basically imagine something that has lots of depth like Skyrim or Dark Souls...
Both are shallow games. You will probably find more depth and variety in Megaman bossfights (and that is not even saying much).

just remembered this one, check out brogue. it's a roguelike game that's meant to be accessible and easy to understand, but with lots of depth underneath.

I've already posted this in another topic, but you should try out Space Rangers 2: Dominators. It's an old russian game with tons of various mechanics: turn-based space combat, arcade combat, RTS, text quests, trading, etc.
