Is it possible to impress an artist with some awesome physics in a playable demo to the degree that they would be inclined to collaborate on a cool indie project. Like if you were certain the coder had skill, would you be inclined to go with out pay making a project that seemed quite promising?

Also how much freedom do artists want?

Artists being people, there's all kinds. Some just want to do a job and get paid. Usually here on TIGS you have someone a little more invested in their work, so they want creative control.

Ask yourself this: are there any artists who have made awesome art to the degree that you would be inclined to program their concept for free?

The obvious answer then being if you have something special, people will want to work with you. But you have to be fair, you have to be dedicated, you have to be good at what you do. Prior successes help. Prior collaborations and good references help. If profit sharing is promised, you should have a business model or a plan for how the money will be made.

tl;dr Yes, but you better prove that you're worth the effort. Don't make promises you can't keep.

It is a sad reality that the posts for unpaid projects on forums such as this one are... less than impressive or promising. But there has been a handful of projects that have impressed me with art to the point that I'd delight in coding for it... IF the game design seems fun/worth while.

The main problem is reliability. I don't feel like most of these projects will retain steam for more than a few months, and there isn't enough trust to dedicate my time to.

As for creative freedom: Would you like to make the theme from scratch? Have a rough idea of the theme? Have concept art to base your art off? To what degree of freedom are you most inclined?

Also, would completely even profit sharing be enticing in conjunction with promising code + organization?
