I second Deathworm stage, with randomly appearing worm of death (properly telegraphed, obviously).

I also believe that we should have a Cafe inspired level, despite the game not being nearly done yet. Because it's that awesome.

Jetpack Brontosaurus level. You fight on the back of the 'saur as it flies around, kinda like the Arwing stage in Smash.

Two suggestions from the Experimental Gameplay Project:
1. Tower of Goo. Should be a simple but recognizable level, possibly with destructible sections.
2. On a Rainy Day. I don't know how many other people have played this but it's absolutely smashing. Its theoretical stage would be mainly situated on top of the umbrellas, with paper boats floating by underneath to catch you if you fall, like that damn bucket in Peggle.

If that worked, it would be excellent. I just don't know if you could do a lot of meaningful PG without making the stage too big. Worth a try though.

You know, for Dwarf Fortress, we really need someone to integrate the ASCII into the artwork. It'd look rather cool if done well, and somewhat subtly.

Just saying. A PG level would be nifty- I agree about the size issue, though. Perhaps it could be "edited" on the fly by tiny Dwarves? And lava. And demons. And Kittens.

A World of Goo stage would be awesome, but I think something like Tumbler or Regurgitation Pumping Station would work better.

I like the idea of a Regurgitation Pumping Station level with destructible goo platforms. It would make Xoda's down-kick a lot more dangerous too (couldn't resist mentioning my first character Grin)
