I have been looking for new games to play for this Summer, but I am at a bit of a loss. Usually I prefer short arcadey games during college semesters, but over the Summer I like games that play like classic 90's games, but at the same time have hours and hours of depth and gameplay. Basically imagine something that has lots of depth like Skyrim or Dark Souls, but it plays like Mario or Megaman or top-down Zelda.
What games do you know of that would fit what I am describing? And please avoid Early Access games.
I will start with these two games as examples of what I am describing as "classic gameplay with tons of depth":
-Terraria -Binding of Isaac: Rebirth

1: Might and Magic II: Gates to Another World
2: Starflight
To this day these two still blow my mind as to how friggin' much content and lore is packed into these two games. Fun fact: The box for each of these games advertises for the other on the back...Electronic Arts had some brilliant employees once upon a time.
Now you do have a Sega Genesis lying around right?

!!! It's even the DoS version that I never had a shot at! Sweet.

Hmm, well theres Stardew Valley, Axiom Verge, and Treasure Adventure Game that come to mind. La-Mulana is another one, Cave Story, Deathwar 3030, Datajack, almost everything by Locomalito such as Hydorah, Matilda Castila, Viriax, The Curse of Issyos, etc.

Haven't played yet, but i believe Hyper Light Drifter fills your criteria. -New Game -"Play like a 90's game", it's simillar to Zelda alttp -Has "lots of depth". Easy to play hard to master

Dwarf Fortress Looks like an impenetrable ASCII game of old, but if you're willing to scale the barrier to entry, it provides some of the most sophisticated simulation systems in gaming. You can create and play through hundreds of worlds and still have hardly scratched the surface of what's possible. The in-game simulation gets so detailed that – simply as an emergent feature of the game's interacting systems – cats can die from alcohol poisoning after walking through a puddle of it and cleaning themselves.

Basically imagine something that has lots of depth like Skyrim or Dark Souls... Both are shallow games. You will probably find more depth and variety in Megaman bossfights (and that is not even saying much).

Mark of the Ninja. I was really surprised by this game.
Also, Windforge, it didn't make much of a splash when it was released, but I played the heck out of it.
