Kinda interested in what ideas people have; If you had unlimited budget/time/resources etc. What would you make?

a 10 pin bowling themed action rpg, with a 10 pin bowling based combat system and the militaristic melodrama of an ace combat game. but about bowling.

A sort of The Witcher 3 + Doom + Gran Turismo + Street Fighter, with side quests like where you play sports like Pro Evolution Soccer and Wii Sports.

A massive 3D TRPG - like a fantasy-style XCOM with an open world.

Multiplayer space simulation where you must use orbital mechanics around a really small planet with strong gravity (so you don't need time warp) with planetfall, crafting, base building, resource gathering, scanning, etc. Something like House of the Dying Sun meets Kerbal Space Program meets Space Engineers. All in low poly, VR ready, possibly even for android with cardboard and gamepad, so you can play while in the waiting room for the doctor or in a queue at the bank.
**edit - simple building/upgrading, no voxel-based monstrosities

MUD, but with space travel instead of rooms. Your space ship can also go into narrative instances with a small group where you fight in MUD style and solve narrative puzzles. The catch? There's no visual interface, absolutely everything is sent or received through voice.

A wizard that can build golems and add simple programming to them. It would be kinda Settlers meets Factorio.
