The only thing stopping us is a lack of modelers...

That reminds me of Megaman Legends for some reason.

Nothing should stop you. You can easily create the entire game with placeholders like that. If you're on to something special either buy premade models (fairly cheap), pay someone to make them for you (expensive), or learn to model yourself using Blender.
