Newer games that are like Unreal and Quake II, ie. fast and fun, you don't have to wait for NPCs to finish talking every other minute, there's actual level design so you're not just repeatedly locked into an arena until enemies stop spawning á la Serious Sam and Painkiller and most importantly it can be played coop
That or anything approximating the experience of Half-Life deathmatch
Your probably best off waiting for Sven Co-op 5.0 to get released, whenever that is. Yeah it's not a new game but 5.0 is going to be the first stand-alone version so that sort of does make it a new game.

I have Hero Core and the original, La Mulana and Cave Story. I will check out Metroidvania: An untitled story. The name is just "An Untitled Story", sorry for the confusion. Thanks a bunch for the recommendations, guys! I've actually played Knytt and Seiklus, but I'll definitely give the others a look.
I know people already mentioned a billion games for you, but I just played Hohokum, a psn game, and really liked. It got that Fez vibe, it's minimalistic, has strange and visually beautiful worlds and little conflict in general. I think I even spotted a Fez reference. Check it out!

Does anyone know any less-known action-adventure games with lock-on targeting like Zelda, Souls and Metroid Prime? Preferably from either the PS1/N64 or PS2/GC generation, since I want that era's aesthetic, but newer games are fine as well.

isn't necessrily less-known, but it is under-appreciated and under-played. If you don't treat it as being a Castlevania game it's actually a really fun action game (and features lock-on similar to -Souls). It is a fairly short game (around 10 hours an average run-through) but there are a lot of characters to unlock and each character has slightly varying paths (somewhat akin to Castlevania 3, NES).

goemon 64 is close but has no lock-on (its basically a zelda clone with more platforming). the 2nd goemon on the n64 is a sidescroller.
